We'll have my cousin's family over for Thanksgiving Day dinner as they live down the street from us. My wife has been cooking since early morning with my assistance in washing dishes, pots, and pans. We'll have broccoli crepe cups, yellow squash casserole, sausage, apple, cranberry stuffing, sweet potato casserole, creamy corn casserole, cornbread casserole, freshly made cranberry sauce and turkey. All these recipes are internet finds. I already made Belgian waffle mix for desert tonight with various fruit toppings.

Val, I’m sorry, but your pineapple casserole sounds just awful. I should say, not yours, but in general. Never had it I admit. Please take no offense. Anyone else had it, liked it, didn’t?

Morris, I have made a scalloped pineapple casserole to serve with ham.
It has crushed pineapple, cubed bread, butter, sugar, and eggs. Not very healthy but I think it tastes very good.
Unlike Val’s recipe, it does not have cheese or Ritz crackers. I have never had that Southern version.

Speaking of how much work Thanksgiving dinner is.....There was a woman at the 8:15 class at the Y today. She said she was up until midnight, she had the turkey in the oven, also was serving ham and had 21 people coming to dinner ! I would not have enough dishes and silverware for 21 people! Hope some of the guests are bringing side dishes..... Dedicated (crazy?) of her to show up at the gym.

No offense taken, Morris. The pineapple casserole is delicious imho and is often served at gatherings here in the south. The pineapple goes on the bottom (chunks or crushed) along with a mixture of flour and (of course) sugar and the reserved juice from the canned pineapple. That mixture is topped with grated chedder and then crumbled ritz crackers mixed with melted butter go on top and the casserole is baked in the oven for about 20 minutes. Its quite good.

I had a great Thanksgiving good conversation and good food. I'm not a fan of Thanksgiving or fall foods but my friends came up with some good dishes. We started with a Charcuterie board which my friend calls lunchables for millenials, then Bobby Flay biscuits, the turkey came out great and we had green bean casserole, sweet potatos with a topping of pecans and brown sugar, stuffing and in my honor they made a crockpot full of meatballs stuffed with mozzarella and pecan pie and pumpkin pie for desert.

For whatever reason our T-meal wasn't what we hoped. The turkey was moist but lacked flavor except for the dark meat, the mash potatoes were good but the gravy didn't win any awards, and the dressing was just ok but not nearly as good as past years. The apple pie, just ok. The French rolls were great! A shame since she put a lot of time into it when she wasn't feeling 100%.

That is too bad. All of our food was delicious. Turkey, gravy, mashed potatoes, dressing, Brussels sprouts, my green bean casserole, cranberry sauce, rolls, and two desserts - pumpkin cake and apple pie. But it is a lot of cooking and cleanup for 30 minutes of eating.
