Feeling OK today. Turkey Day still on. Rick must think he's feeding an army. Cooked a turkey today and will cook another tomorrow. There are only six of us! He's planning on giving away food and lots of leftovers. I get "turkeyd out" pretty quickly....he might be enjoying some of those leftovers alone.

Here's a menu question. I heard local news people talking about having to have mac and cheese on the menu. That was never on my family's menu when I was a kid, nor has it ever been on mine as an adult. Maybe if folks have ham instead of turkey, then I could see the mac and cheese as a side dish. I never got into the whole mac and cheese thing.

Lainey, growing up, my family never had mac and cheese as a side dish for turkey or other holiday meals either.

However, in more recent years, when our daughter would ask what kind of side dish she could bring, I would often suggest her homemade mac and cheese or corn pudding because at least then the younger, pickier eaters would have something they liked to choose from.

Lainey, nice to read you are feeling ok. Donna asked our son if he wanted "take out" tomorrow. Nope. Apparently too afraid of getting Covid from mom's homemade cooking. She has already made an apple pie just because of tradition; usually she has pumpkin as well to keep son happy. The g-kids will have their mom, etc. as backup, but I know they would have enjoyed coming . . . that's when they get to chat with Donna about what they would like for Xmas. Yep, every year she saves up a Xmas fund and I'm sure they have figured that out.

How does Rick heat up a turkey he did the day before?

He's cooking a second turkey tomorrow that will be ready when the guests arrive! Rick's mother used to cook the turkey very early, and carve it up and serve it cold. I guess she figured our gravy would warm it up. Never cared for that, and didn't really get why she did that, she was a really good cook.

The first turkey will be give away turkey, and used to make turkey pot pies. I sampled it when he carved it. It was tasty. Hope tomorrow's turkey is good too.

Unless the unpredictable asthma symptoms or other issues pop up, I'm actually planning on hitting the gym in the morning it's open for a few hours. The killer instructor has a killer 90 minute class planned....work off some calories in advance.

Well, I had never heard of it before either. It is apparently popular in the Midwest. Some just call it Corn Casserole.

I am not sure if this is the exact recipe that we use, but if not it is very similar. I think the recipe that we use, uses 1 lb cans of the corn. I would have to look in a little cookbook that I have, but you get the general idea.

Donna said she watched the news this AM and they were talking about how to cut up a turkey. The big secret was wait 1/2 hour. She said, no way! I agree.
