maybe she is a very kind and gentle soul and was looking for an easy way out rather than just saying no.
So she suggested an activity she didn't think you'd do.
She could have just as easily said why don't we flap our arms and fly into to Boston.

Steve,
Here's what you do. Tell her that you don't currently ride but it is something that you might want to start doing. But given that she's used to it, you think it might be better if you took her to dinner or maybe went to a park for a picnic (if she is the outdoors type). Then you see how it goes and then if you want to pursue tell her you want to start riding but you want to ease into

went for sundaes tonight - screw that excersice crap - wait till she has my pork stuffed pork roast 
and twice baked - she'll forget all about mountain bikes although i already got the "you should quit smoking" line

Well, you should! (I quit cold-turkey in '85 ... not easy but definitely worth it!)
