This has become my (and my wife's) all time favorite way to cook a fillet. We have a well seasoned cast iron skillet (NOT made in China!) that we use for this. We get the thyme and rosemary from our garden. Using a European style butter (Kerrygold is fine) is important. Take a vitamin C before dinner! I got this a few years ago out of the WSJ. He nailed the recipe, just like Paris!
