I'm asking in this forum because I want to tap the wisdom of the ages!

Here's the deal -- I'm not sure when an extended warranty would actually BEGIN.

I bought my S in February of 2002. It's now September, 2004.
So, if I purchased a Hondacare warranty for four years, would it end in September of '08 -- or February of '06?

It depends on the language in the Warranty itself. The Hondacare extended warranty begins with the original date the vehicle went into service (or the miles run out, whichever comes first) ie, your warranty clock started ticking in 2002. The extended warranty that I bought when my original Honda warranty expired is for seven years -- that means I got four additional years of warranty above and beyond the Honda warranty. I was quite indignant when I discovered this, thinking that a seven year warranty should begin when I bought it -- it means car age, not time passed. Apparently your warranty will expire in '06.
