Instead of spending Easter with our large extended family like we usually do - Italian one side and Portuguese on the other - my wife, myself, and our son will be home eating in. We are making home made lasagna from scratch (it's time I teach my wife the family recipe) , and she wants to bake a carrot cake (her favourite). Should be a nice meal on Sunday. Happy Easter to those who celebrate, and Hoppy Easter to those who believe in the Easter Bunny.

I heard on good authority that the Easter bunny is an essential worker as is the Tooth Fairy.

This was a very different Easter for us.. We haven't cooked for Easter in a couple of decades as we always go to our aunt's house and eat with our cousins and close family, and she makes her famous lasagna all the time.

This year my wife and I cooked at home. I made the lasagna with my wife using our family recipe for the first time ever. It came out perfect, just as good as we ever had. My wife made a carrot cake from scratch, which was also great. A really nice lunch despite the different circumstances. Happy Easter to all who celebrate.

Looks great! Do you put egg in your lasagna? Have you guys ever made or had the Italian rice pie pastiera? My Mom and Aunt and Grandmother always made that. We always had a big ham for Easter with sliced pineapples on it and crescent rolls and veggies and quite a few deserts and there was always a lot of candy. This is the second year without my Mom so it's the second year that Easter isn't the same for me.

Thanks Rob, yeah our long standing family recipe has hardboiled egg in it. It is basically a large number of thin layers of home made pasta, with light amounts of ground beef, tomato sauce, mozzarella cheese, finely chopped hard boiled egg, and parmesan cheese on each layer. The longer you bake it the better it gets IMO. I have not heard of rice pie pastiera but you got my interest now and I need to look into that to see if we have something similar. My family is from South Italy (Calabria) and many of the regions have their own versions of recipes. Sorry to hear of the loss of your mother, I can understand how that changes all holidays. My mother is still alive, but we lost my father many years ago.
