I had not made tetrazzini in a long time so made an easy one this evening and it was delish. Just boil some spaghetti (no more than 4 min or so since going to bake), then combine it with a can of mushroom soup, a little bit of water (no milk necessary), some chopped celery, leftover cut up chicken (or turkey), onion (I used dried), garlic, salt and pepper to taste. Bake covered at 375 for about 40 min. Sprinkle with parmesan cheese.

I edited to say bake it covered. Otherwise it gets kinda dried out and crunchy.

I was the cook for the past 25 years, and my wife never really cooked. My wife has been a stay at home mom in recent times so she took over the cooking duties. She is Portuguese and I'm Italian, It took a bit of time to teach her our recipes, but she has accepted the baton and took off running. We had stuffed eggplant this week, and spaghetti and meatballs tonight, I have to say she has perfected both recipes. In these stressful times I find that kind of comfort food really hits the spot.

It really does. I need to make some eggplant parmesan soon. I do not fry it but bread it and bake in the oven with a bit of tomato sauce on each slice, so it is more healthy. Can't really beat Italian cooking. Just have to control the carb intake a bit!! I also make Vito's mother's spaghetti sauce with meatballs or sausage and meatballs. I use it over pasta or in my lasagna. She is a fantastic cook.

I love eggplant, it is one of my favorite dishes. Even the non-italian dishes like a veggie eggplant sangwich, like the taste.

In my experience Portugese people are very good cooks you just had to bring it out of her!

That sounds really good. I still have an 80 year old mother who makes pureed tomatoes and jars it once per year in the fall months. It is enough to keep us going for an entire year for our favourite tomato sauce recipes.
