I made out first foray into trying to make southwestern pozole.
The hard part is there are a zillion recipes. it's almost like macaroni or potato salad.
So I kind of cherry picked and came up with something .
The good news is I came up with something close. I though it was pretty good and Barb gave it a 3.8 out of 5.
The bad news is it wasn't nearly as good what I had in Tuscon.
but.... I have ideas on how to get it closer. mine was more soup and less stew.
Needs to cook slower and longer to release the flavors. but we both look forward to making it again.

I have discovered farro. Talked about it in the diet thread. A healthier alternative to rice. Used a lot in Italian cooking. It's chewy and has good fiber. Made some a couple of nights ago in the rice cooker as a side dish and the +1 loved it. A little olive oil and topped with parmesan cheese. Still experimenting with the amount of water to cook it in. Then I made a Greek salad yesterday with the leftovers - added tomatoes, cukes, Kalamata olives, and feta cheese. Olive oil and lemon juice dressing. Delish!

Kale soup. It's a favorite of many including those of Portuguese ancestry living in the area. Rick made two pans of it on Saturday. We shared some with our son and his family. It's good weather for soup.

Made some pretty darned good pork chops last week on the grill. Nice and thick ones, seasoned with a rub, seared on one side, cooked on the cooler side of the grill to finish. 1.5" thick and juicy! Got them from Hyvee and they were a lot better than I expected.
Another thing we like to do for pork chops is just pick up a pork loin when they are on sale cheap and then slice into chops. Those turn out great.
My wife does most of our cooking and she cooks very very good food I like to cook but cook less since I am the one working so I have less time. Make some good Sunday Gravy (Italian) recently which turned out great that I probably already mentioned on here. Made some home made biscuits and bacon gravy last weekend which is always a hit around the house.
Another thing we like to do for pork chops is just pick up a pork loin when they are on sale cheap and then slice into chops. Those turn out great.
