I picked up a new pizza oven, I wasn't planning on using it this soon as winter weather was approaching. But the temps are in the upper 40's low 50's this weekend , so it will be pizza night tonight. Home made dough is proofing. We will make some margherita pizzas and some focaccia bread as I made a bit too much dough, so lots to go around.

Having watched a youtube video on a show about New Haven style Apizza last night has given me a craving for good old fashion pizza , not the commercial stuff we get on delivery around here. It is a very cool show about the history of New Haven style apizza in the US, if you have 1.5 hours to spend it is an interesting video.

Nice on the new oven. I have heard a lot about New Haven pizza relatively recently I’m guessing it was featured on a show and has gotten some popularity. I never heard much if anything at all about it when growing up.

Exactly Rb, it is not something anyone in Italy would ever know about and in all my years I never heard of it. It sprang up and became popular in New Haven CT as far back as the early 1900's when Italians landed in New Haven to work the big industrial factories there (Sargent) that needed cheap labour. The pizza restaurants used coal fired ovens that are very cool. If you get a chance to watch some of the video I posted it is very interesting. Great show.

I broke in the new pizza oven with a round of pizzas tonight, everyone in my family said these were the best ones we have ever made. They came out perfect.

My infrared temp sensor gun topped out at 600 degrees F though so I could not fine tune the temperatures which I like to get around 850 F degs, so I had to guess at the temperature. I will need to get a new infrared gun now. The crust usually has bit more char on it when temps are higher but I was just guessing tonight and temps were likely below 850 F.

Below is my attempt at a New-Haven style pizza , plus a focaccia bread topped with green and black olives. The focaccia is eaten cold, and can be kept for a few days to snack on whenever needed, it goes really good with soup. The focaccia was delicious too.

Well, I am still trying to lose a couple of pounds from our last river cruise. The next week will not be helpful. Sun we are having lunch at our local fave Thai/Japanese place. Tues evening is dinner downtown at a Middle Eastern mezze place before the Madonna concert. Sat is back to local steak house and Sun our traditional Christmas Eve dinner will be at a very nice Italian place nearby. Christmas Day will be leftovers!
