I’ve tried many different frozen variety’s of eggplant cutlets and most are not that great but recently I bought some at Aldi’s which are really good. It is called Season’s eggplant cutlets and is in the freezer section.

It is very easy to make my version. Slice the eggplant however thick you want, coat in breadcrumbs, season with salt and pepper, top each slice with tomato sauce, and bake until tender (maybe 30-40 min at 375). Add shredded mozzarella (if you want it) and grated parmesan about 10 minutes before removing to make sure the cheese melts but does not burn. It is yummy and healthier since no egg and no frying.

I kinda like steak so the other day we picked up this little ribeye, slo smoked it on the Kamado then finished with a hot reverse sear, came out about perfect, and with a potato and a couple shallots and a nice adult beverage. dinner was great!

That looks great. I really like Kamados. For steaks I usually do a sear for 1 minute a side on the low rack and then bring it up to the high rack with a clay under it for 4 minutes. I do the remote IT thing and make lots of different stuff in it.
