I've been having some eggplant parmesan that the +1's mother sent back with him from NJ. Yum...I also made my own a couple of weeks ago, but I bake mine instead of frying it. She sent some meatballs and sauce and a bit of pasta fagiole, too.

^^ She baked hers too. She said it turned out good. I'm glad she's showing an interest in cooking and that she seemed to enjoy it. She cooked for her bf for a change. He usually cooks for her.

I did a slow cook pull pork sunday.
got a little carried away with the chipotles though.
got a 50-50 vote. 1 son and I liked it. The other son and wife did not.

I made turkey chili but Matt said it was too hot so he added cinnamon. I have an acorn squash to cook and also some farro. Might stuff the squash with it!

I thought the soup was a bit bland, but with parmesan on it and a bit of salt it got better. The +1 put pepper and hot sauce on his. Never heard of hot sauce on minestrone before.

^^ I made vegetable beef soup today. It was great for lunch and I assume it will be good for dinner as well. We're enjoying it.

I also made some non-dairy cornbread, which turned out pretty well. I put a can of creamed corn in it.
