It came out great and was a pretty simple recipe really. A bit more cleaning the meat up after cooking with the extra fat and stuff, but it fell apart and was pretty easy to separate. When shopping I also noticed the beef short ribs at the regular grocery store were $13/pound! I was happy to use mine from a small farm that cost me $5.50 a pound Food is getting up there in price!

I bought some baby eggplant the other day and was trying to figure out a different way to cook them, I like eggplant but I don't have a lot of uses for them as we typically just stuff them.

Tonight we made pasta alla norma, it was angel hair pasta with diced eggplant, in a tomato sauce.

Lots of garlic, some cherry tomatoes, olives, and fried diced eggplant, seasoned to our taste with a bit of chili pepper. My family loved it .

I bake eggplant in the oven instead of frying. Just dip the slices in breadcrumbs, put a bit of tomato sauce in the middle of each, season and sprinkle some Parmesan cheese on top. Bake for about 30 min at 375. Serve with pasta.

We like dried apricots and dried mango. And prunes. I discovered the mango I was eating had added sugar, so I made a change to this company - Anna and Sarah. The mango is a bit drier and less sweet, but very good, so will be ordering from them again.

Roasted Brussels sprouts have been on the menu lately. Got a lot for TDay but only cooked about half. So am cooking the remaining ones today. Delish.

I've seen that recipe on youtube as well, but I never took the time to see it in any great detail, I need a closer look.
