I remember reading something about part of your credit rating being figured on a proportion of available credit compared to how much you actually owe.

That's not true. I always pay off my Amex and CapitalOne cards each month and my credit rating is about as high as it can get, within twenty points of the max. A day does not go by where I don't get an offer to open a credit card account from some bank.
Well, unless something has changed in the last few years (I guess I need to get an updated credit report as it has been a while since I last checked) Amex does not report to credit bureaus when one pays as agreed. They only report you when one is late. So, in other words they can be your best friend (by making problems and disputed charges go away) or your worst enemy (if you get behind with them) IMHO.

I have been carrying an AMEX card since 1977 and the last credit report I looked at AMEX was not even on it.

We do have enough "Rewards" points for a two week cruise.

I carry debit cards only. I haven't owned (or been owned by..) credit cards in nearly 10 years. The only hiccup in my plan is car rental is sometimes tricky with the debit card.

Going to China on Sunday for 16 days. Hoping to use ATM and credit cards for cash withdrawals but will buy some Travelers Checks....just in case

Interesting: AAA no longer SELLS travelers checks....due to rampant fraud

I try to keep around $40 in my wallet, but use my cars from time to time as well.
