Why do S2000 ECUs' (or atleast mine) have to be reset frequently

It is true the 2000 ECU is not the best (I switched to a Mugen a long time ago) but there should be no reason for a regular reset. I suggest you clean the TB, EGR system, and insure a clean air filter before you take any other action. Between that and sometimes some issues in spring and late fall when gas formulations are changing you should be OK with that ECU.
Do clean your TB first... I found mine will accumulate oil residue over time and a cleaning every couple of years makes a noticible difference.

Have you made sure the heat class on the new NGK plugs is COLDER or the SAME than the stock (7 is stock) since Iridium has different spark characteristics than the platinum OEM ones? This should only make a large difference at high rpms though..

Are they'r any signs that indicate it's time for a valve adjustment.? I got my car my02 with around 60k miles maybe 5 years ago now has around 96k miles I have never done one, got it at a auction so I don't know if the previous owner had one done..
