what transmission and diff fluid should I use?

I understand that Dot3 and Dot4 are not incompatible (hence the DOT3/4 designation on the DOT4) it's just that if you mix the two, the boiling point is still the lower value (more of an issue for your brakes than your clutch). Do not mix Dot 3 or 4 and DOT5. They are not compatible. I and many others have used the DOT4 (DOT3/4) Valvoline.

I like the Valvoline Dot 3/4, but I would use any rated DOT 3 or 4.
I like Amsoil MTF too.
But I'm surprised that no one has mentioned LE1605 for the diff. It is the best gear oil you will find for the S2000, period.

I run Motul 300 in diff now more versatile in different climates.

Transmission = ams oil synchromesh
Diff = ams oil 75-110 severe duty gear oil.
The trans seems to be easier to shift since I switched but it could be just my imagination.

AMSOIL MTF feels the same as Honda MTF
GM Synchromesh FM shifts a little better when cold if you have notchy shifting but is not as smooth when the transmission is hot
People seem to really like the Redline MTF, but I have yet to try it
