water temp...depends on how your car is set up...
oil pressure... 6bar is normal max pressure once the revs get to a certain point...IIRC above 3,000rpm you should see this...

my oil pressure seems to sit at around 2.0 at idle and goes to max of about 6.2
water temp last night on a cool night was between 85 - 100c .....
i have the stock thermostat and fan switch on an NA engine......is this good? i set the warning light for water temp at 110c.....

my coolant temps when driving seem to stabilise out at 87degC'at idle, it does rise to 100degC or so depending how hot the ambient temp is and how long i idle for.
even when driving hard, i've found coolant temp still sits on about 87-90degC
my oil pressure ranges from 2.0hkpa-7.0hkpa
1hkpa=1bar=100kpa
not sure what to set limits at for this atm

It's funny how a guy in the States would get gauges that read in metric and I, who live in metricland, got gauges that read in psi and *F.
Anyway, my normal cruising coolant temp is around 180*F. When I'm in hot city, stop and go traffic, it can get up to as high as 220*F and on rare occasions, it can get up to 230*F. (100*C = 212*F) When the coolant temps get that high, it's when I've just come off the highway and have not yet turned on my A/C. Once I've turned on the A/C, I can reduce the temp by almost 20 degrees F.
Once up to operating temps, oil pressure reads just a hair under 75 psi using 10W30 Mobil 1 synthetic. At idle, it can drop down to 25 psi. On a cold winter morning, right after start up and using 5W30 Mobil 1, the idling pressure can be up over 75 psi. If I begin to drive down the road, even at rpms below 4000, the oil pressure can get near 95 psi. This is why you wouldn't want to rev it too high when cold.
As for setting the limit for coolant temp, I'd set it for around 105*C or around 220*F. If this becomes too annoying due to your hot climate, then kick that up another 5 degrees.
Regarding the oil pressure warning, there really is no point to set this as the idiot light on the dash does more or less the same thing. It's NOT so much the lowest oil pressure you need to worry about since once you read very low to no oil pressure, it's kind of too late. What you should be doing with an oil pressure gauge is to learn to monitor its steady state running fluctuations. ie. If you are running at steady speed on the hiway, and you see the pressure begin to "wobble" or fluctuate, this is your clue that something is wrong and that your oil pickup is beginning to pull air. You will see this "wobble" long before you will see the stock dash light or any low pressure warning you may want to set. Another thing to learn to keep track of is if your pressure doesn't come up to the "usual" place when you bring the rpms up. This, too, will be a hint of possible low oil level or poor pump performance.
But I suppose if you must set it at something, try 20 psi as this will be just below any hot idle pressure you may get. Any higher than this and it will go off every time you come to a red light.
