Default weird idle after head gasket replacement?

I blew my head gasket on my S, took it all apart, milled my head, put it back together and now it is doing a really weird idle. I can rev it to a certian point and it will go nuts reving up and down in a sparatic form. The only thing i could think us is that i screwed up timing somehow, but it seems like if i had it wouldnt idle smoothly. Anyone have any ideas?

Reving up and down on its own is a stuck IAC valve.

I have built the brian crower stroker motor, and have not had it tuned yet, but i was driving it without a tune before it blew a head gasket and it ran just fine, no jumpy idle or anything.

Absolutely. Make sure all electrical and vacuum connections are accounted for.
