VTEC Not Kicking in Hard

Just tested it and it may be my imagination, but it feels like more of a boost. OP have you checked all of your fluid levels? I took my s2k from a Cadillac used dealer to a Honda dealership before buying it and they found a few cosmetic problems, but didn't notice my oil was below the x's on the dipstick or that my coolant was low.

The '04 was bone stock. This '05 has a grounding kit and a cone air filter.
I checked the oil level and it was about almost 3/4, but I topped it off with half a quart. Nothing really changed. The tone definitely changes at around 6k and I do feel a slight power increase, but nothing like the kick I felt in the '04.
I don't know when the previous owner last changed the oil. But I will be changing the oil and installing some fresh spark plugs along with fuel cleaner next week. Hopefully that will fix it or else its off to the dealer. The '05 does have that Map Sensor TSB done to it, so I think the MAP is fine.

I've been in one car that acted exactly like this. It ended up that one of the pins that locks the high rpm cam lobe was not engaging, which led to only half the cylinders going into VTEC.

It's not a wire. It's a metal pin in the valve train that is driven by oil pressure. Take a look at this video to understand how VTEC works:
