The baffle is welded in with sonic welds (17?).
Look into the rain h8r mod. He has a detailed guide on the remove/replace procedure.
If you have a drill press and a little aptitude, it's not too hard.

My '99 AP1 valve cover wasn't leaking before I did the last valve clearances and retainer inspection, so I did not bother replacing the cover seals. Still no leaks since...
From what I can tell it's the original gasket and plug well seals.

Shop around, i have found Majestic to not be the cheapest. They were one of the earlier people to adopt the internet sales but plenty now.

I use hondapartsguy and found their pricing better. Service is OK. Use code "ship30" for 30% off shipping

Very true. Me too. You made the right decision. Enjoy your new VC.
BTW - I'll add my voice to the chorus and say that I have reused S2k VC gaskets many times. No troubles whatsoever. But, lately I just put in new ones for peace of mind and because I can.

Let me add that when you are doing what you are doing in the garage, don't forget that Mr Puppy at 10 months (a 100 lb puppy) can make that decision to replace the gasket for you!

Just be sure to check that the VC gasket has not partially dropped out of the VC channel before tightening the bolts. I found my gasket slipped out on intake side near firewall while dropping the VC in place. Luckily, I saw this before I mashed the gasket.
