I don't have a scanner, but I had my 2002 S2K with 15,000 km's dynoed on a DynoPack last week...My only mod was a AEM CAI...
My best run was 204.7 RWHP
Torque 132.1 lbs
Is this pretty much what stock S2K's put down?

Any particular scan tool you would recommend? I have a laptop, so a realtime logger with PC software would be ideal..
Looks like Autotap http://www.autotap.com/autotap_windows_products.html has a generic import scanner for $200 with windows software - Are there any that provide add'l "honda specific" diagnostics?

Could be that Dynapacks vary from dyno to dyno too! I've seen variations of up to 5 hp on different dynojets (although some are very close to each other), so variation on a Dynapack shouldn't be surprising.
One more reason you should pick a dyno and keep going back. :-)
jahwerx, any decent tool is fine, as long as it has fine resolution datalogging. Data every 1-2 seconds is too slow (should be every tenth of a second or so, so a minimum sample rate of 10 Hz, and hopefully much higher so you can sample multiple variables).
