Besides the last few bars going quickly, I also notice it comes off full quickly. One thing that aggravates me is the filler neck trips the gas pumps off too soon. I'm always able to get $0.50-1.00 more gas in the tank after it clicks off. If I don't, the gauge reads one bar off full in a matter of miles.
I usually get about 11 gallons in the tank when I fill up. I go around 250 miles per tank. That's almost 23mpg which is not bad for mixed driving with frequent visits to VTEC land.
What you have to consider is the risk of "sloshing". I'm sure this tank is baffled, but once you get down to 1.0-1.5 gallons in the tank, you can run the risk of cavitating the pump if you're doing excessive g's.

This is the first two tanks of gas in the car...
tank 1 = 242 miles, refilled with 10.01 gals
tank 2 = 228 miles, refilled with 9.25 gals
Drives have been mostly highway, maxing out at 6K RPMs (but running 5-6K RPMs alot when I can)

Do a search about topping off the s2000 at the gas pump. It has been discussed a fair amount and the concensus is

When I fill her up it is normally about 10 galllons, however I am luckly if I got 200 miles out of those 10 gallons --- normally 180 or so. I gues I get out of control at times
