Thinking about using the impact for it.. Is it okay to overtorque a little bit?

The release bearing guide is the steel sleeve that the throw out bearing rides on. It is bolted to the inside of the trans' clutch housing. Its a $30 part.

They tend to deform or barrel out over time. If that happens, the clutch will be hard to push, will come back up slowly, and will slip between shifts.

After thoroughly cleaning all the parts with brake cleaner, urea grease goes onto:
-release bearing guide
-splines
-small amount on release bearing face (where it contacts the fingers)
-slave cylinder ball (after filing the wear "nipple" off it)

Gotcha. Is that wear "nipple" not supposed to be there?

And nevermind about the Impact Gun.. I just needed to position myself differently to get it.

Is the throwout bearing supposed to be loose?? I can move up and down, side to side a little bit. Not much , but a little bit. I'm thinking when I put the main shaft through it, there will be no more play, but is this normal?? I even still have the clutch alignment tool in it. I just read a post for another vehicle that it is normal, but I want to make sure it's normal for our cars.

ALSO.. is the pressure plate supposed to be touching the flywheel when you torque it down? I assume so since I don't see any other way to get any torque on it otherwise, but it seems odd to me.

The plate bolts to the flywheel directly so yes it has to touch and there is only one way to bolt it on. The throwout bearing tends to be a loose fitting part so that is what you may be seeing, the fork definitely tightens it up once all is mounted up.

FANTAAAASTICCCCCCC. After taking 2 hours just to get the transmission connected to the motor, I started bolting it together and torquing it down. Done, going to engage the release fork.. it's stuck again.. how the f@#k? I look closer.. apparently I was tightening it (via bolts) onto the pressure plate and it made a big dent in the outside PP metal. So now 2 of the PP teeth are bent a little it to the rear of the car. I bent them back a little bit with a flathead, but they're still bent about 1 mm more than the others. Hopefully this doesn't affect performance too much. We'll see what happens.
