Can't recall but does something need to be grease? Throw out bearing, shifting fork? Has to be a reason for this. Can the bell housing warp/damaged from the crash?Using the same bellhousing? I was in a crash in another car and the starter snapped off the housing and was hanging by the wiring.

3 Transmissions and in all 3 3rd gear is busted?
Possible... but is it likely?
How does it get into 3rd with the engine off & clutch in?
How does it get into 3rd when you do a 1-2-3 or 5-4-3 shift with engine off and clutch in the whole time during shifting?
Did you use the same clutch slave & push rod?
How is the original master?
Clutch fluid is how old?
How much free play do you have in the clutch pedal?
Mechanical free play - vs - hydraulical free play.
What trans oil?
The problem stayed with the chassis so - most likely - that's where you look.
IMO.

Car off, and clutch in, it shifts fine all the way up and down the gearbox.
yes, same clutch master and slave cylinders. Clutch fluid could probably stand to be replaced. I've never done it, and I doubt the previous owner of the car did either. Will add this to my to-do list.
I'll check free play in the pedal, though I don't remember it being anything noticable.

Put it at #1.
And bleed that slave off the trans with its tail (bleeder) upwards
About the clutch pedal free play IMO!
Mechanical: may be adjusted to close to nothing.
Hydraulical: can't be adjusted and should be there.
In your answers I read: clutch pedal/master/slave/fluid issue.

Thanks, SpitfireS. I didn't have a chance to check out the race car last night, but on the way to work this morning, I did an experiment in the street car. I was taking a left hand sweeping curve, wound out 2nd, popped the car out of gear, and tried to push it into 3rd without using the clutch pedal. I was met with exactly the same feeling that I'm getting from the track car. I was somewhat surprised, as I was just expecting to hear a grind, and feel the shifter push back. Instead, I got the 'blocked gate' feeling with no grind. I'm definitely going to take a look at the clutch hydraulics when I get home tonight.
