Default Overheating, please help!

I have an 02 s2k with 79000 miles on it, i have just finished my engine re-build and I am having some overheating issues. At first it would reach rediclous tempatures after a very short period of driving, within a mile or 2. I changed out my thermostat and It was doing fantastic for an entire day until it happened again. I was just crusing on the interstate around 80 and it started to overheat all of the sudden. I pulled off, let it sit for 10 mins, and drove all the way home with the bar never going above 3. No problems, then this morning it would heat up to 4/5 bars whenever I was sitting at a stop, then cool right back down to 3 as soon as I started moving again.

I am not positive that my fans are working, but can anyone help, I'm REALLY hoping its not my headgasket because that would be a B****H.

Mods Include: Fully forged Internals, 89mm Pistons, darton sleeves, cometic headgasket, and ARP headstuds.

Any help would be great, thanks!

Did you get all of the air out of the cooling system?

i believe i blew the headgasket last night, i had the problem fixed then i was driving down the interstate and it blew the lower radiator hose off, just happened to look down and my heat gauge was in the red. I will check the oil to find out this afternoon. does anyone have the process for changing it written out? OR know if im going to have to mill my head/block?
