Is your car for the track? The gauge choice may be different depending on how you use your car. On the track, oil temp might be more important. On the street, it is more to satisfy a curiosity and to serve to make daily driving more pleasant.
Since we have a coolant jacket around the base of the oil filter that serves as an oil cooler, oil temps are somewhat related to water temp, especially for a daily driven car. I find water temp more useful in my car. It tells me exactly when the engine has come up in running temp in ultra cold winter days, so I know when I can activate the heater fan to get some warmth. In summer, I can use it to tell me if I'm getting close to an overheat and respond accordingly.
On the track, oil temp may fluctuate more dramatically and this might be a better indicator of engine condition than water temp.

Go for the oil temp. I have expierenced on the 2 and I think the water temp is quite useless. When you hit the track oil tempurature is normally your major concern.

Good luck

Thanks once again for your detailed help xviper
My car is a daily driver and I don't go to the track...

I have another question... How do you install the sensor to tap into the water temp? My Autometer gauge has a 1/8 NPT sensor. Do I need to buy a special adapter to install this?

Thanks for your input also
I think I'll go with water temp because I never go tracking.

Places to install the water temp sender is somewhat limited on this car as the stock sending unit is nearly impossible to access. Here is a thread on how I installed mine:

Please keep in mind that this is only one option. There are others. I did it this way because it was the easiest option for me.
