Ive noticed around 90-110 Psi when cold at idle and driving around, when its around 180 degrees its at 20Psi at idle and goes up to 90 when above 3000 RPMs

Update:
The shop, after calling Science of Speed and others has decided that machining the factory crank -- even after nitrating it, was not a good idea.
Apparently, many others have had the same oil pressure issues after machining and using oversized bearings.
So be forwarned, any of you that may think about doing this.... Let my situation be a warning.

According to the Service Manual the clearance between crank and journal should be between 0,017-0.041mm.
Whatever you do to the crank and/or the bearings you should have this clearance.
Damaged crank bearings/journals will also make the oil warning light come on at idle, at least mine did, and it will produce missfire CEL's.
And you'll find this in your oil:

On the other hand, I never had the oil warning light come on, or any misfires, or debris like that in the oil pan. My symptoms started with the car falling out of vtec at about 7000rpm, or sometimes not even engaging vtec and just struggling to rev past 7000. then I noticed my oil pressure gauge and saw only 40-50psi when at high rpm.

Did you take pics of the bearings?
IMO, oil starvation, as in: a short period of no oil supply at all, will destroy bearings.
Not just add some clearance.
What oil did you use at the time?

In my case, the bearing debris was a very fine dust at the bottom of the oil pan. It was almost like rubber dust. I was running the Texaco Havoline GF-4 10w30 at the time of the starvation. I had an oil pan baffle break (non-OEM pan) and block the oil pickup, which caused the starvation.

I remember pictures where you could see markings - a small half moon - on a piece of alu left by the oil pump filter screen / pick up.
Was that yours?
The best oil in the world can't protect an engine if it isn't being pumped around.
