I didn't go to the extend of removing the side bolsters, I basically stopped when I realized there was a metal bar that help keep the side bolsters from folding.

I've swapped the seat bottoms in my car. It's pretty easy, but the slider on the passenger's side will not quite fit on the 'old' driver's side seat bottom. I used a hammer and pounded a dent in the bottom of the seat pan to make it fit. No other problems.

If you live in a decent sized town, and the wear on your seats doesn't involve severe - scratch that - If you live in a town with a few leather-repair places, take your car to one of them. I took an old BMW to an upholsterer in Chicago and was very happy with their results (and the cost).
Upholsterers routinely refinish and re-dye leather, they can match leather, whatever you want.
