My S Feels Sluggish.

My S Feels Sluggish.
On certain days my S2K feels kind of sluggish. I'm not sure how to explain but I'll try my best.
Here goes...
Once in a while the ride will be smooth. Throttle feels very responsive. It will feel like it has a little more torque as well with buttery smooth shifting. Feels great when launching.
Other days it just feels bogged down, less responsive and feels like I need to put more effort into shifting. Also launching feels like a total total let down.
What I've done so far:
Changed Oil and Oil Filter.
Changed spark plugs to OEM Laser Platinums.
Changed OEM air filter to K&N drop in.
Changed Transmission fluids.
Differential fluid.
Filled my tires to manufactures recommendation.
Re-greased shifter with UREA.
Never let my fuel tank never drops below half.
I'm changing my spark plug seals and valve cover gasket this weekend. Not sure if thats a problem as I noticed some oil on my spark plugs when I was changing them.
What else is there?

Didn't know what you meant by map whack. I googled it and got this DIY.

So basically I just unplug the harness and tap the sensor with a blunt object?
