All these are time sensitive fluids regardless of mileage. You can use any of the big box store DOT 3 or 4 hydraulic brake fluid (for the brake/ and clutch) but OE Honda coolant only. And @ 14 years, wouldn't hurt to change the trans, diff and plugs.

If you can diy, do it.
Since you are in New England, you have option to make pilgrimage to have Billman work on your car. East end of LI.
Worth the trip. Considered best S2000 mechanic in the world.
I concur that dealership is last place I'd ever take an S for service.

Some other things not mentioned were to regrease your shifter components and also the clutch slave cylinder where it meets the clutch fork. The stock grease dries out over time and it's good maintenance for enjoyable driving. As mentioned, Shin Etsu those rubber gaskets all over the car, get them nice and puffy!
