i wonder if it's when you try to turn BOTH wheels the same direction that you can't because it's in gear. (i've done this enough times you'd think i'd remember)

ah ok, so i had it mixed up too. i humbly stand corrected!!!
just to clarify (thanks gotswap)
if the car is in neutral, and you spin a wheel by hand, the other tire may or may not turn, and this will cause the driveshaft to spin. the other tire's behavior will be unpredictable because of this.
however, if the car is IN GEAR and you spin one wheel, since the drive shaft cannot spin, the OTHER wheel will spin in the OPPOSITE direction. this is because of the nature of the LSD.
just to clarify (thanks gotswap)

wow! very interesting, i'm definitley gonna try this out tomorrow. i'm curious though, isnt it almost impossible to turn the wheels while its in gear? hmmm, this is all some really good info!

The wheel turns easy enough just make sure it is in gear, both tires are off the ground and the e-brake is off.

and wheel choks!! so many people forget that when they lift the back end like that, that the front wheels are free to spin and the car could roll right off the jackstands.

Apologies to FISH. Gotswap is smarter than all of us.
I just took 5 minutes and went out and did it. Ebrake released, both wheels off ground, tranny IN GEAR. This effectively locks the ring and pinion gear to the tranny and engine (which isn't turning) and allows the rear diff to act as a rear diff and transfer power from one side to the other by reversing the direct of spin. By having it in neutral, the ring and pinion can spin since this disconnects from the tranny. This then lets the LSD come into play, allowing one wheel to spin at a different speed than the other just like when we go around a sharp corner.
