Let's see:

I'm driving hard and my oil pressure drops dangerously low in a high-g corner. I can either:

1. continue on and possibly damage the engine
OR
2. have the engine suddenly cut power in a high-g turn, with the resulting lift-throttle oversteer throwing the car into whatever is trackside, possibly trashing the whole car.

All have missed one of my points here.

I doubt that the oil pressure will drop to less than 12psi during a high G turn at high RPM.

Sorry, I misunderstood your purpose here.

I'm drawing a blank on the name of the product here, but there used to be a product called something like Accu-Sump. Essentially, it was a tank attached to the engine that could store about 1 quart of oil under pressure. If the pressure in the engine dropped, the product pushed its 1 quart of oil under pressure into the engine. When the engine oil pressure exceeded a threshold, the product filled with pressurized oil. (Yes, liquids cannot be compressed. The air space in the tank provided the pressure.) The stored, pressurized oil could be used to prime the system before a cold start.

To me, this seems more effective.

It will and it does. See the Race forum. Some folks have oil pressure data logs and others oil starved motors.

It is not "something like", it IS Accusump™

http://www.accusump.com/

A fuel/ignition cut-off at low oil pressure is kinda after-the-fact, IMO.
To make sure there is no oil starvation use this system or a dry sump.
A dry sump will be fool-proof but $$$$$

Btw.. how would you cut off the fuel pump or ignition?
Use a relais - controlled by the switch - inline with the fuse?
