Loss of power! Please help!

Have you done a full compression or leak down test just to make sure your motor is still healthy? Make sure you do it with a warm engine. I just couldn't believe how many parts you have changed out and still couldn't find the problem. If I were you, I stick some 106 octane unleaded race fuel to see if it still does that. If it stops that means you are pinging bad with normal premium gas.
I assume you changed out your plugs, how's the plugs look? anything strange? whitish color, burnt look, cracked insulator or electrodes? Or maybe it's just black as hell. Do you misfire in anyway?
If you really suspect the fuel system have a problem, pop the fuel pump cover open under the convertible and see if there is anything rusty or dirty in there. Your old fuel pump can be analyzed visually or open it up to see if any dirt or rust were contained in there. You can also cut open your old fuel filter and see the condition of it. If it looks nothing unusual, then I doubt it's the fuel system. ( I read you changed out the filter and pump so I assume the new parts are in working order.) You can even swap out the fuel pressure regulator and see if it's acting up.
About the knock sensor, if you want to swap it out, I believe it's under the intake manifold, screwed onto the block next to the oil pressure sensor. I highly suggest you buy a Helms manual either from Ebay or from honda dealership themselves.

Thanks for the help Hybrid,
my next step will be changing the Fuel Pressure Regulator, it makes sense, the knock sensor is something i'll have to check aswell. The weird thing is that the thing happens sometimes, start to show itself slowly, gets worse and worse, really feels like something slowly gets blocked. Feels like the fuel gets blocked.
