The stock oil filter takes nowhere close to a qt. of oil.
Here are some pic's of the filter I use on my "S". Stock Honda S2000 filter, Napa for the "S" and my Baldwin filter. I think you'll be able to see the small differences in size between the three filters. I used a ruler to help show the small difference in size of the filters.

You're not sure because no one, in this thread at least, made that claim.

I thought you meant that the stock oil filter held 1.4 qt's. My bad.

The Baldwin holds over twice the oil as the stock filter and the filter paper itself is way over twice as large. I have over 2 million miles with Baldwin filters and have never had one leak or go bad on me. I have over 45k miles with this filter on my "S", I run my oil 7500 miles and the oil filter 15k miles.
I am going to buy a Ford racing oil filter adapter(and modify it) to see if I can run a larger filter and have it point straight down.

If it's in the middle you should be filling it to the top of that area where it reads full. Sounds liek you are exactly a quart low. Not a good practice.
