After searching the forum, I agree...I really doubt the kind of erratic idle and other symptoms I'm having is from the gasket. The kind of idle bouncing I'm seeing (1k to 2k) is not showing in any post where an IMG is involved nor is a perf drop or poor mileage.
Also, since the ambient temp these days is well above 90F, which means on the asphalt, intake air is probably close to 100-120F...I can't imagine the ECU seeing those temps from the IAT sensor would try to keep the car in start-up mode for long at all.
I'll pull the VAFC to see if that makes a difference, but the car was running normal and getting great mileage on the drive down to the mod day immediately prior to the gasket install. Then the issues appeared immediately after the install during the test drive and return trip after the mod day.
I'm wondering if I may have damaged something...an injector; the IAT sensor; or the IAC.

I remember that some of your sensors had to be mounted slightly different than mine because you had a different throttle body or something...particularly the one that had the zip tie or something. My guess is that one of your sensors are loose. I'd also make sure all the bolts are re-torqued. A small vaccuum leak anywhere around the manifold could potentially throw things off too. It's so odd that yours is having these issues. I haven't noticed any ill effects from mine yet, but then again, my car has nothing else done to it either....
