Don't "help" it when it flounders. Keep your foot off the gas and let the ECU contend with what's going on. Hopefully, it will learn after a few episodes. If you "help" it, it will take that much longer to learn.
If, after a few goes, it doesn't learn, you might look into doing the MAP whack, ECU reset or even getting a new MAP sensor. This is no guarantee that the problem will be solved but it's a good start.

I've never seen a list for TSB's for the >04 models, is there one floating around I haven't seen?

How long before I should consider taking it to the dealer?

Here is the thread that talks about it:

This whole cold start thing goes back to the very first year that S2000s existed. It is the ECU unable to contend with a change in climate and environment at certain times of the year - seasonal changes, humidity, air pressure, ambient temps, etc.

yea, i never gas it while starting the car up. it just hesitates like its going to die, then gently starts up, which causes me to hold the start button a bit longer. btw, this only happens at the initial startup. could it be my single exhaust? it happened a while after i installed it though, also when the weather started to get a bit colder.

Update!!!!
After further review of my owners manual on the quick start quide it says the following under "Things you need to know":
"At times the engine may take longer to start than usual; the engine management software is working to reduce emissions at start up."
