I think you guys needs to adjust your baseline weight a bit. A stock S2000 with half a tank of gas is going to weigh quite a bit more than 2650.
Stock, completely empty with the spare and tools already removed, and a near empty gas tank (~2 gal), the car will weigh just a hair under 2700lbs.

You guys forgot to mention ditching the trunklid and installing an Amuse cf trunk which also ditches the rear brake light and would probably shed another 25+lb.
As for the bumper bars that Randy mentions, you could swap the steel ones for aluminum ones front and rear and still have some crash protection left.
Powerhouse Amuse dropped 200lb+ off their car, and still kept their air conditioning and added a full rollcage, so it is possible.
