you indicated a worn area of 0.125 inch into the new rotors?? if so the heat shield wouldn not be the culprit. Sounds like you need to switch back to the OEM rotors if they did not have any issues, wonder if you got rotors that are defective/not properly heat cycled to harden the metal. or the pads are entirely too hard for the rotors. 0.125 is an eight of an inch, pretty deep

New thoughts based on your latest input. As I understand correctly you ran the new pads for two weeks, the were good, then updated rotors and have noise. New pads come with a bedding compound to rapidly contour the pad to the rotor. Not sure why you swapped rotors but perhaps they were worn. The two weeks would seat to the old rotor and now you are asking them to conform to the new. Might explain a few things. Just a thought.....
