Default High oil pressure.

For awhile, under WOT and high revs, I would blow the dipstick out. Simple fix right, just get a new dipstick. Well now, when I go to check my oil; I pull the dipstick and pressure releases, like when opening a bottle of pop.. What is causing this? This will sound weird, but she is supposedly built on a 9:1 ration according to the previous owner. (Lower compression) Not running any aftermarket tuning software. Any help will be appreciated! Thanks!

That's not oil pressure. It's high crankcase pressure causing that. Make sure your breather port flows freely, the pcv isn't clogged, and that your compression is good.

All taken care of.

Next question though. The other day she was running somewhat crappy when it was 96 degrees. I'm considering a new radiator, oil cooler, coolant-heat exchanger, and fans. Should I just start at the radiator though?

Why would you just start buying lots of parts when you dont know what is wrong?

Are you turbo or sc? And how are you not running any engine management? I suspect that is your issue.

The car is designed to operate at those temps. Look for the damaged part first. It may be a simple sensor. Unless your temp gauge is above three bars I don't think the cooling system is to blame.

Why run a 9:1 compression N/A?
No wonder it runs crappy.
Excessive pressure build-up in the crank case is blocked crank case ventilation system or blow-by = bad rings.
If it used to be a turbo'd block, I can guess what it is.

Previous owner had it boosted.

So say it was an ex-turbo'd car, what is the problem?
