Default Fuel pressure problem Fuel cell installed

Well, to make a long story short, my "used to be" mechanic messed my car up pretty good, and is now avoiding me to fix it. W/e, I took these pics because I rather show what I think is the problem vs. try and explain it. Just some key things I think people should know, the car has had the factory fuel tank swapped for a much lighter fuel cell, the fuel pump has been swapped with a Tsunami pump. All electrical wiring to and from the pump is correct, and all the fuel lines are good.

The issue is, when the car is at low rpms, it's not idling at the proper psi, atleast I dont think so. When the car is driven, it starts to loose pressure and eventually shuts off. Everyone I have talked to says it's most likely my FPR that is the problem. Im just wondering if you guys can shed some light on this subject. Seeing as my mechanic is avoiding this issue, it looks like im gonna have to fix this. Here's the pix:

what are we looking at? the top pic appears to be the fuel pressure, the other appears to be the oil pressure.

true, sorry i forgot to mention. At idle, the oil pressure is where it normally is or should be. But I never heard of the psi being about 80 or high on the FPR
Maybe im wrong but isn't there a way to adjust it and isn't it supposed to be around 40 - 50psi. Can I adjust it myself? I have an AEM EMS, does it need to be adjusted through there? So many questions
