excessive oil consumption
My 2001 S2K usually burns the average 1 quart/1K but in driving 850 miles at 70-80 mph it burned 2 1/2 quarts. using Mobil synthetic for older engines (80,000 miles). Lots of black gunk around the exhausts. Do I need a ring job, change of oil brand, PVC. Anyone know a great s2K mechanic in Denver?

Done a compression/leak down check? PVC valve check?

1 quart per 1k miles is acceptable for an ap1. The 2.5 quart burn-off rate is overly excessive though, particularly in highway driving conditions. My ap1 burns oil, most of the burn-off is in city driving conditions, it drops to almost nothing in steady state highway driving conditions.
You definitely have something wrong somewhere. IMO, it would be odd for consumption to jump that much all at once. The engine parts that cause high oil consumption (rings and valve seals) don't normally fail that fast, and the increase in consumption is more gradual. Check your pcv valve first, and look around the engine bay for any signs of oil leaks. Check the intake arm leading to the throttle body if oil has been pushed into there from the valvecover (blocked pcv). Check your spark plugs to see if they are wet.
Try switching to a high mileage oil or a thicker viscosity oil, and see if the high level of consumption continues first before you consider opening up the engine.

Maybe a new PCV and switch to Castrol Edge.

I'm using less than a quart in 5000 miles in my AP2 using Royal Purple 10W-30 synthetic. Note this is the 2.2 liter engine but car guys at work claim similar use in their cars, none of which are S2000s though.

Get rid of the mobil 1 and switch to a non syn 10/40. Thats the quickest way to reduce oil consumption on a motor that clearly has oil control ring issues. Mobil has a high burn off rate among the bunch, so simply switching brands can make an improvement, and switching to a non syn is another, then moving up to a 40w will improve further. In 00 to mid 02 had poor oil flow through the oil squirters when not in vtec. These are designed to cool the pistons. These updated squirters were brought into being because under sustained higher rpm driving out of vtec (such as the scenario you are experiencing high oil usage) premature engine damage was occurring. Honda updated the squirters to provide more flow bellow vtec. This is a part that can and I think should be swapped in with any pre mid 02 engine before damage is done. F20 also are notorious for added oil usage through the valve guides. When ever I hear usage near the max 1Q per 1000 threshold 9/10 times you can count on usage through both the guides and rings to some amount. A leakdown test will give you the best idea of where and how much. A compression test simply verifies that your compression rings are still in order.

Royal purple is suspect at best in this motor. Try a normal Syn Valvoline or Castrol. For an F22 id be concerned if I burned through a whole Quart in 5k miles. I go through 1/4 in 4k miles. Any more then that and its beyond simple oil breakdown, you are burning it. Try reducing your intervals to 4k and better yet switching oils, and see what happens.

Good advice here, but without any signs of these issues, it may be just your car's pattern.

First guess, especially as it's climbed so fast, is an oil leak or a valve guide.
Note that the oil may not leak when the car is off or at idle, only at >3000RPM, like on a highway.
Also, AP1s are getting old, and they didn't have the best oil consumption to begin with. I think many are now 'weekend only' cars, like mine is. In that case oil consumption is a non-issue, as it would take me 9 months to burn a quart.
