Engine Temperature at 2bar ?

As you've already stated, you have a "cooling" mod. Your situation is not quite the same as the original poster, which I believe, has a stock thermostat. (Unless he's not telling us important information.)

My car is stock and does not have any cooling mod.
The weather has nothing to do with this behavior since I have owned the car for 5 years and this is the first time it exhibited this behavior.

The problem is now solved and Chris is right
It was the coolant sensor.
