lol @ foreplay.
to the op, let me put this in perspective for you. You have a 2001 like me...
When you start the car, let it sit for at least 50 seconds idling. Then pull away GENTLY. do not go over 4k until you have 2 bars. When you have 3 you can let her rip.
As others have said, your ECU is doing its best to stop you from raping your engine. Be thankful it runs like crap while its cold, otherwise you'd be doing damage getting full torque before the oil has warmed up and circulated.
I actually have to sit in my damn car every morning idling, until I get the second bar, this is because I have to ascend a very steep ramp to get out of my underground parking.
By the way, this goes for ANY car, but more so for the S. The S is a high maintenance enthusiast car, you will have to baby it and maintain it fastidiously, or it will fail on you.
I baby mine when it's cold, but I absolutely rape it when it's up to temp, I vtec'ed every single day of ownership, and even though I maintain mine fastidiously, and I still didn't avoid a serious failure (see my thread below 'Smoke again...').
I hoe you didn't make a mistake buying htis car, cos if you don't start reading about the its specific peculiarities, you will get frustrated and poor.
