Never dynoed the car stock and am unsure on the coolant temps. I was there just a couple minutes before driving an hour to get there. Could the time between arrival and dyno run play that much of a factor?

When someone says to let the engine cool they mean under the hood temps, not operating temps. Engine temps of the coolant, intake, intake manifold, oil, can really play a factor after being heat soaked from a long duration drive. Putting a bag of ice on the intake works well, also make sure they put a fan in front of the car for some cool air. Hot air has to be the worst factor for the dyno due to lack of cool air that one would receive from regular driving.
