Do the rear wheels toe in or out?
I have a very, very conservative toe-in dialed in the rear in order reduce tire wear.
I might be lowering my car on Spoon progressive springs, which yields a 1" drop. Will the rear wheels toe back in near stock settings, or will they toe out even further towards a 0 toe?

Im about 100% sure they toe in. I just lowered my car about a month ago, and finally got an alignment. Got it set to as close to the UK specs as they could... and my previous rear toe for ONE wheel was 0

Perhaps the most important thing to do after changing the suspension is to have the car re-aligned. That is the only way to insure that your car tracks and handles properly and the tires do not experience unnecessary wear.
