The sound you're describing could be a number of things.
Diff specific noise is typically evident at several speeds, not just at low speeds - and the frequency of the noise should increase with speed. However, the noise will likely be more noticeable at certain speeds than others when dealing with a noisy diff. Bearings in the transmission can also be noisy.
Old tires, and some specific tire tread patterns have been known to either make a somewhat similar noise, or seem to amplify drivetrain noise.
You may want to consider sampling the fluid next change interval to see how things are wearing. It would be a good idea to do this with the transmission as well.
For note - Just because you had bearings changed out recently does not eliminate the event as part of the problem. This diff can be tricky to set up properly, and if things were not reinstalled correctly, this could possibly be part of the problem.

Exactly like what I had. I had to be on a quiet street to hear it too. Shop said it was the transmission output bearings. I also had a slighly noisy input shaft bearing also,so all bearings along with second gear synchro was replaced. the noise went away once it was done.....
