A FLUIDS/QTYS sticky would be cool . The information is here , just spread out . Even then , it still only took me about 20min. to gather everything I needed .
First off, we don't have any power steering fluid.
There is no single place (in one thread) where this information is posted. Aside from it all being printed in the Helm service manual, you will find much of this information in the "FAQs" at the top of this forum in the various "How To" threads regarding these fluid changes. Within those DIY threads, quantities and brands are mentioned. For a more thorough expose on fluids, read the "Oil Journals" at the top of this forum.
That Sta-Lube gear oil is crap compared to LE607 - not even in the same league. I would not put it in my lawn mower.
Sta Lube makes a decent cheap gear oil pump, and the container they sell their gear lube in is convenient. I bought one and just dumped the gear oil into my recycle jug.
here you go. direct from the honda helms and service manual. the dealership DOES have access to this. any of their mechanics can look this up. page 2-8. click on the image, and then in the new page, click on the image again, and it'll give you a full size version you can print.

It's also listed in my '03 owner's manual. My guess is that "yarou" looked in the maintenance section. If you go back and find the capacities section, I'm sure it will be there. Every owner's manual I've ever looked at has all the capacities listed.
