"so do you recommend Amsoil or Red Line? Any other US brand?"
I'm not sure of any other brands other than Amsoil in 75W-110. I think their "Severe Gear" oil is a solid differential lubricant and it's hard to go wrong with that one.
Some people swear by Red Line Oil, others swear at it. I used to be a fan but I've come to the conclusion that others products are better ... especially considering the price.

Easy, cheap, throw-away pump solution: Use a short (18-24") piece of tubing. Remove cap from oil bottle. Drill a hole in the center of the cap slightly smaller than the tube and cram it through the cap so that the bottom of the hose just reaches the bottom of the bottle. Put the cap back on the full bottle, insert top of tube into fill hole. Squeeze and release the bottle until diff is full.
It's easier if the oil is warm. If you want to make it easier next time (in exchange for cleanup this time), drain the hose (still in the cap) and soak it in soapy water. Rinse, dry, and save for next time. (It's easier to clean a hose than a pump - or just hang it up to drain.)
I can post pics if someone is interested, but it's pretty easy.

hey guys i know the diy and the manual says keep the vehicle on a level surface during this procedure. If I only have a pair of jackstands to raise the S from the rear, would I encounter any issues doing it this way?

i wouldn't get under the car with just two jackstands.
accidents can and have happened.
besides that touge is right. you won't get all the old fluid out.
