A 75/140 would be fine in the S, Mobil 1 75w/140 has a pour point of -48c
I used to mix Mobil Delvac 75/90 and 80/140 in a 50/50 mix in my over the road truck and when I retired I had about 1 1/2 gal left so I use it in my S and any other vehicle(my bike to) that takes a GL5 lube. Some very good lube.

Amsoil 75w140 has a much lower temp pour point than LE1605 (SAE110), so it would be perfectly fine.

It's not too thick. Combined with shear over time, the 140 would be my pick. Not too sure about thicker as I had an oil which was a 140 but almost 30% higher viscosity than the already thicker than OEM spec 140 I have now and felt the car slightly sluggish

There are two channels in the diff housing's casting.
One below the pinion shaft and one above.
They both connect the area between the 2 pinion bearings with the area where the Torsen (and most of the oil) is.
As far as I understand oil is thrown from the top of the ring into that top channel and returns via the lower one, IOW there is some oil flow.
Driving forwards....
Also, IIRC, the oil reaches the middle of the pinion, when stationairy.
That level will drop a bit when you drive as oil will stick to the ring and stay in the Torsen unit.
Still, I think the contact patch is at least partly submerged in oil, even when you're driving.
The pinion head itself will pick up oil too as the lowest part of it is always submerged.
