checking to see what injectors you have in wouldn't be hard. Same with the plugs. Checking the O2 sensor and fuel pump take a little more effort. Especially the fuel pump. That thing is a PITA to get to.

If you have to drive the car, put back on the EMS and run that map until you can figure out what all is still on the car. My suggestion, when you take it to get looked at about the other things, put the EMS on just for that short drive. It may be a pain, but you said it drove fine with it on. Better safe than sorry.
If the guy basically gave you the EMS and FPR, then it is good possibility he may have gave you higher injectors or a larger fuel pump as well.
Like the guy above mentioned, if you have the previous owner's contact info, dropping him a line and he might help clue you in.

I guess the good thing is that I don't really have to drive the car at all b/c it's not my daily. So maybe there's no point in putting the EMS back in there afterall, since my goal is to get the thing running on the stock ECU anyway. I have the EMS up for sale right now. It'd be nice if you were still in the area, because you could give me a hand with all of this.

Another question,
Is it possible to run a Walbro fuel pump on the stock ECU? I'm assuming he left it on there. I don't have a stock fuel pump. Would I have to find one, or can I leave the Walbro one on the car without any problems?

my guess is O2 sensor or injectors or spark plugs or all the above.
