Eventually the owners of S2000's may need to look at alternative engines, since Honda isn't producing any new engines for our cars What would be the easiest engine to swap into the S2000?

There is companies building engines for the car. If anything we will need quality engine rebuilders to provide remanufactured engines. No engine swap is "easy" but I guess a K series would probably be the easiest but still a good amount of work. Considering there is cars that are 100 years old that have their original engine its not impossible to keep the original engine.

I highly recommend Chris Harper in Atlanta (charper732 on here) for a motor. He really knows his stuff and does the best rebuilds on there, everything is to OEM spec and provides support after the sale.

Another F20/22. No reason for the original engines to not last an indefinite amount of time with the proper care, maintenance and upkeep.

Alright guys, I found a live one. Guy just crashed his in my city.
I have an AP1 and he has an AP1. Can I drop his complete engine into my car with my old ECU (plug & play) without having to keep any accessories from my old engine? Sensors, etc

Don't see why not. This would be the easiest and most logical swap that will make your life a whole lot easier provided he wasn't having engine trouble of his own
